In a world increasingly crowded with alternative meat and milk products bragging about small carbon footprints, it’s not surprising investors have poured millions of dollars into sustainable coffee alternative Atomo to help it bring bean-free coffee to market ($16.99 for a four-pack of 8oz cans). What is surprising is how much the direct-to-consumer brand’s “molecular” cold brew—made from a proprietary blend of upcycled date seeds soaked in grape extract, chicory, and other flavors, and boosted with tea-based caffeine—tastes like the real deal (albeit slightly less acidic). It’s a shockingly close coffee dupe at a fraction of the environmental cost: 93% less carbon emissions and 94% less water usage, according to the company.
