Swapping iceberg lettuce for mixed greens was only step one. Over her decade leading Detroit public schools’ food program, Betti Wiggins sourced 40% of food locally and made hers the first district in the country to offer free breakfast to every student. Now, as officer of nutrition services in Houston, she’s working with the Texas Department of Agriculture and other organizations to bring healthy meals to more than 215,000 children. —Mandy Oaklander
