To get to one of the buzziest taco spots in the U.S. Virgin Islands, you’ll have to hop on a boat or take a ride on a paddle board. Lime Out, an outpost of the island’s popular Lime Inn, opened in March off the coast of Saint John. Staff deliver food to nearby boats from the solar-powered restaurant—said to be the first floating taco bar in the Caribbean. The tacos are filled with everything from surf and turf to ceviche, and relayed in biodegradable containers. “We’re trying to do everything we can to keep the environmental integrity of the bay,” co-owner Chelsea Baranowski says. —Samantha Cooney
