## Transcript

>> This is Tim Morrison for Time. I recently sat down at The Pony Bar in Manhattan with beer sommelier Samuel Merritt who recommended five thirst- quenching beers for hot summer days.

>> It's summer. It's hot outside. You picked a few beers for us. Why don't you tell us-

>> Yeah.

>> what we're looking out here?

>> The first beer that we have for you is called the Flying Dog Woody Creek White Ale, and it's a Belgian- style white ale, which are really great summer beers. They're very light. They always have a hint of citrus, usually from putting [ unk ] orange peels right into the beer. They are spiced not only with hops but with also often with chamomile, so you get this really nice dryness quenching. It's like lemonade for grownups.

>> Interesting little brewery.

>> They actually have a really famous artist to do all their work for their graphics. The man named Ralph Steadman who of course, you know, did all the work for Hunter S. Thompson, and they have really good quotes from Hunter Thompson. One of my favorites is just one the side of the bottle. It just says " Good people drink good beer ." So the next beer I have for you, Tim, is called Stoudts Heifer- in- Wheat, and it's from Adamstown, PA from a company called Stoudt's Brewing Company- still a microbrewery. They are the first women- owned microbrewery in the country. The special type of yeast they use really gives you these great fruity and spicy esters, which is basically it'll come right off the nose as banana and clove and sometimes bubblegum.

>> Cheers. Kinda tasting the bubblegum.

>> Okay, there it is. Next beer, Tim, is a saison from Ithaca called Ground Break Saison- just a great variance between producers, always gonna be quenching, always gonna have, you know, a pretty big spice element to them and it's also very fun to say in a French accent. You're gonna, you know, " Saison. Give me my saison ." So cheers to the saison beers.

>> Cheers. You know, what sort of stuff would you eat with this?

>> I would eat Chicken Pad Thai, not hot but medium. Yeah, so some flex of red pepper but not tons. So this is Wacko from Magic Hat. It is a summer ale.

>> It looks a bit different from the other ones [ unk ].

>> It's definitely different. It has beet extract in the beer. I'm pretty sure some of the sugars from the beet are actually fermented, but you can see it gives it a really fun red, reddish hue here and I have yet to have it this season. So let's try and talk about it a little bit.

>> All right. Let's try it.

>> Cheers.

>> Cheers.

>> So it's very light. It's built for summer because it's not heavy at all.

>> Is this an American craft thing to start adding things like beets and coriander?

>> Different flavors of beer has- is a really old thing. In the last thousand years or so, everybody is like, " Oh, you know, the hop is really good. It helps to preserve the beer. Let's stick with hops ." but no, not the case in the U. S. these days. It's like, " You want to put some beets in the beer? Go ahead. You want to put raisins in? That's cool too ." And so first time in my life, I've had a beet beer. That's kinda cool. So the next summery beer that I have for you, Tim, is the Southampton Double White Ale. Basically this is the American interpretation again of that Belgain- style wheat beer.

So Double White indicates that " hey, this is gonna be stronger white ale ." The white ale is typically 4- 1 / 2 % to 5- 1 / 2 % or so traditional white ale. This is- the guy named Phil Markowski out in Long Island, so he turned around and interpreted the style in that it's a bit stronger. So you get this nice lightness but- and quenching, you know, thirst- quenching thing but also you're gonna get some strength, so 7 % alcohol. Cheers.
