This small multi- ethnic city state boasts an outsized menu of tasty food from all over Asia-- Indian, Malay, Chinese, Thai, Korean, Indonesian, the list goes on. The best place to look for answers are the Hawker Center, the city is famous for. At the Maxwell Food Centre, specialties range from Rice Oysters to Hainanese Chicken Rice, a long time favorite. >> Basically, the technique is they cook the chicken in this amazing broth that has ginger and garlic and all these other vegetables in it. They boil these chickens, whole bunch of them in this broth which flavors the broth even more. And when the chicken is perfectly cooked, and how he knows that, it's instinctive for him I guess. The Spicy Gouramis and Curries here are easily as good as any found on the subcontinent. If you happen to have an appetite for say, Sri Lankan Blue Crab, that's available too. Rested in the heart of the downtown business district, Lau Pa Sat Market was built in 1894, remains a city landmark. To reserve a table, the old ways apply. Put down a packet of tissue paper and your seat will still be empty when you return. However the stalls now serve up Western Fastfood alongside Staples like Dimsum. And the cashless system is used by many of the banking professions that come for lunch. >> The variety of food and the central location make Lau Pa Sat a great introduction to the Hawker Center scene. But some of the better and stranger dishes are off the beaten trail. It helps to know local like Kevin to find. >> We're here to find Sup Tulang which is commonly known as Red Bone Mutton Soup and it's kind of hard to find dish in Singapore but it's unique to Singapore. And it's the spiry, spicy red broth with mutton bones cooked in it. The real treat is to suck out the marrow from the bones or spread the marrow from the bones on bread and dip it in the hot sauce. You're gonna have red up to your wrists and you're going to ruin your shirt, And you're just not gonna give a damn because it's so good. It may take a minute to find this guy. Here he is right here. How long have you been making this dish? >> Forty years. >> Forty years? >> Yes. >> He is the man, this kind. >> Red Bone Soup is not for the faint- hearted. >> Look at that. That's what I'm talking about. That is beautiful. >> It's like if you could take the greatest Wagyu beef, condense into a gelatinous kind of slush and eat it. I mean if I get any bone I'm gonna start rubbing the stuff on my head, this stuff is so good. It's great. Suck that right out.
