## Transcript

[ MUSIC ] So we're here at [ UNKNOWN ], which translates to Yonggol Persimmon Treehouse. This is one of my favorite spots in [ UNKNOWN ]. It's a spot that, even among the locals, only the people who know about it know. This is a very no- frills place, you just have your basics. Yea, let's kind of start cooking. Let's get it going. So, this pork is Jeju Black Pig, which is different than just regular pork belly that you find in America. You actually can't get it In America, it's claim to fame is that the pigs kind of eat their own kind of, what do you call it, like poop? And it makes it better and gives it a very unique taste.

You see here that they kept the skin on so when it cooks and sears. That part gets really crispy. You can see that the pork belly is slowly starting to drip into the kimchi. This one is actually three years old, and kimchi that has been aged that long, it's usually called bunti. Mmhmm. And it's perfect for that barbecue with that pork fat, it's so In Korean cuisine, pork belly and kimchi together is like a perfect kind of combination .

>> Combination. Exactly. So that pork fat cooked in the kimchi works really well with the acid, obviously, of the kimchi. So get some chili peppers grow in here. And some garlic. [ SOUND ] [ INAUDIBLE ] [ LAUGH ] So my favorite way to have kind of cream berbeque is obviously with Lettuce wraps. So we take a lettuce wrap. I put this pickled radish just for kind of that acid kick, or you could put kimchi, or you don't have to. I put a little bit of this meat sauce on the bottom as like a glue. [ LAUGH ] I put some cabbage The star of the show. [ MUSIC ] Belly, and this incredible pork belly fat kimchi, and that's about it.

And then you can put garlic, it's all your preference. I like a little bit of chili in mine. It's kind of build as you go there is no rule, it's kind of what your preference is am sure Monicah will make her's a little bit differently ,
