## Transcript

[ MUSIC ] The Regal Beagle is a neighborhood restaurant, there's only one of them, small and intimate with really good food. My name is Stacy Cogswell and I'm the Executive Chef at the Regal Beagle in Brookline. Fine. Nice crispy skin. The food is kind of whatever I feel like. It's very seasonal, there's a lot of Italian and Mediterranean flavors, a lot of French influences. So I guess you could call it New American. Things are going really well here, we seem to be busy every night, every day, every night. When you're a chef. And you are really passionate about what you do and take your craft very seriously.

You don't have time for the outside influences on, you know, whose noticing you, whose not noticing you. This might sound bad but you don't really care. What you care about is, you know, is my pork rack coming in tomorrow? Or is this fish coming in tomorrow? You know, that's those are your main concerns so. I guess when I got the call for Top Chef. That's when I was like oh That's happening. I don't know how they found me but it's cool that they did and my reaction to it at first cuz I wasn't, I wasn't here when the call came in. I was actually at one of our sister restaurants. And I had my staff calling me, well, my bar manager calling me saying, get beer, get here now.

Get here now. We need to talk. And I got here and he's like, Top Chef just called for you. I was like, shut up. You're lying right now. I'm business. [ NOISE ]. And it was a wonderful experience, and a really, really fun time. But it's a very different experience than anything I've ever done in my life. Now that it's out there, and that's what I'm doing, you know, it's weird, you walk through the dining room and everyone looks up. Which I'm not used to, you know. You go and you talk to a table and they're so excited and they're like I can't wait to watch you. And it's, it's a little embarrassing for me.

I get a little embarrassed. I always turn like the color of my jacket. I'm always like thanks. I don't feel like I have to perform, I feel like you know [ MUSIC ] People are either gonna love what you do or they're gonna hate what you do. And you can't really control either one of those. But as long as you stay true to, to your craft, basically, I mean, you kinda have to take the good with the bad. Top Chef is one of the best experiences of my career. It was really hard. But it was a lot of fun and, I made, a lot of friends. Really, interesting and talented people that, I'll take with me for the rest of my life and, you know, to have that kind of experience.

It's really cool. Not many people get it. [ MUSIC ]
