## Transcript

So, you've probably already mastered cooking perfect hard boiled eggs, but for some folks, the next step, actually peeling those guys, is the tricky part. There are a lot of theories and methods out there, but here's what I found works without fail every time. Once the eggs are done, plop them in ice water til that they're cool enough to handle. If you are not going to peel them right away, go ahead and keep them in the water. Even store them in the fridge that way. The shells are porous and the wee bit of moisture that seeps in helps prevent the membrane from clinging so firmly to the white. The best place to go in is at the wider base of the egg.

That's where the air pocket is. So, its a place where the shell is easiest to get into. Gently tap the base on the counter, and then also tap around the egg and roll it around the counter, applying gentle pressure with the palm of your hand. This helps release the suction of the membrane, so you aren't just pecking away at little chips of shell that stick like glue to the egg. Don't press too hard though, or you might break the egg. Start peeling, and you'll find strips of shell come off like you're peeling an apple. Sometimes the shell even comes off in about one piece with very little effort.
