## Transcript

>> I'm Cathy Sharick for TIME. com here with Rocco DiSpirito. Rocco has a new book out called Now Eat This

>> Now Eat This: 150 of America's Favorite Comfort Foods Under 350 Calories

>> So, Rocco, you're gonna show me how to make ice cream and chocolate chip cookies.

>> So when it comes to chocolate chip cookies and ice cream, each one requires its own approach. Now I'm gonna just tell you about these ice cream pops. These are-- here, they're berry yogurt pops. [ unk ] make, you know, nonfat yogurt pops--

>> Yeah.

>> basically made out of a fruit puree and yogurt.

>> Uh huh.

>> So it's nonfat, all- natural Greek yogurt. Now, guys, this yogurt does not have fruit on the bottom, okay? So it's not-- that's not the kind of yogurt we're looking for. We're looking for just yogurt. This takes 15 minutes to make. Just throw it all in the blender, strain it, and then freeze it overnight.

>> What inspired you to do this?

>> So many things. It was sort of a perfect storm of events happening in my life, and things just happening in popular culture, and the collective consciousness of chefs shifting a little bit towards healthy versus, you know-- I found a butter that has even more butterfat in it than the other butter I've found which had a lot of butterfat in it; and then these are the kinds of things chefs like me would talk about, 'cause more butterfat was better, right?

>> Right.

>> And then, of course, we all started getting a little older. And I actually started cooking at home, and I started to see now what was happening in my life with my weight, my look, my health, and-- You know, lo and behold, doctors like, " Hey, you know, you gotta-- you gotta start watching out, do you know that ?" And I'm like, I have to start watching out? Watching out for what? You know-- you know, like blood pressure, health, all-- you know, all these things are-- they're gonna creep up on you soon. And then I started to do these guest appearances on The Biggest Loser on NBC, and they asked me to transform their contestants' food, and their parameters are nearly impossible.

And at first I was-- when I was told what I had to do which was basically, you know, cook without bacon and sugar; and I was like, how do you cook without bacon and sugar? It's not possible. And then, of course, you reach, you know-- you dig deep-- you reach into your bag of tricks, and in the culinary world, their bag of tricks is really just your basic cooking skills, and what you know about ingredients, and food, and food science. And we figured it out, you know. We figured out some really great ways around the fat and calories on The Biggest Loser. So all of that coming together, and the big hug--

>> Yeah.

>> made me think I should-- I should share this with people. This is cool.

>> How do you make it easy for people like the contestants on The Biggest Loser? I mean, every day you get home, and you're rushing from work, you wanna make something quick and easy. It's hard to make it healthy.

>> It's such a great point. And so many of you want to cook, but want to cook something healthy. A lot of foods in this book end up being a great substitute for any food, any time of the day. These cookies, for example. I love them after working out because it feels like you're rewarding yourself, but you could actually live in these cookies. They're made of beans, so-- This is a chocolate chip cookie--

>> Okay.

>> 45 calories, a little over a gram of fat, no flour, no sugar--

>> These are really good.

>> No flour, no sugar, and the secret ingredient are the white beans.

>> Well, thank you so much for coming here. I'm really excited to try this stuff out.

>> My pleasure. Thanks for inviting me.
