>> For TIME. com, I'm Caitlin Thompson. On the eve of thanksgiving, I sat down with a celebrity chef. Which celebrity chef?

>> Everybody, I'm Bobby Flay.

>> That's right, the same Bobby Flay who has nine restaurants all over the country, including the famous " Mesa Grill ". Bobby has hosted seven food network shows, and he's written nine cook books. I asked this culinary maestro to tell TIME. com his secret to thanksgiving.

>> The key to thanksgiving is not the turkey, it's chicken stock, but most importantly, to reheat things and to bring moisture out. Dinner's ready. But, by the time everybody stopped watching the game, then somebody has to go to the bathroom, then somebody has to go wash their hands, then somebody has to stop a conversation. It could be 20 minutes before everybody sits down. Hot chicken stock, just a little bit-- a little ladle of hot chicken stock over your turkey, reconstitute it from the texture standpoint, bring [ unk ]-- the moisture back, and also keeps it nice and hot.

>> Of course, for Bobby, whose whole life centers around food, thanksgiving is the most important day of the year.

>> I wake up early, about five o'clock. My first 30 pounds turkey, I cook two, lots of wine, one cocktail, but a Cranberry Martini is a great way to start off. I just thought everybody have one. It's a very major operation, but it's something I would { unk ]. My wife asks me every year " Are you sure you wanna do this again ?"

>> Bobby takes us past turkey day and gives us some recipes to contend with the ever daunting pile of leftovers.

>> So, today we're gonna make a turkey Cuban sandwich. We're gonna use some Swiss cheese, a little bit of ham, and roasted turkey breast. So, we're gonna start with some Dijonnaise.

>> Okay.

>> It's mustard and mayonnaise. And, were gonna take some cranberry sauce, little bit of salt, and then you're gonna take one-- two pieces of cheese.

>> Okay.

>> And you're gonna take some turkey. We're ready for our sandwiches here in the big machine here?

>> Definitely.

>> So, were gonna use a Panini machine. Now, this is gonna take about five minutes.
