Maybe it's the 16,000 episodes and counting of _MasterChef_, or the hot-take economy that has everyone litigating which toppings belong where, but the generation raised on _SpongeBob SquarePants_ has really taken after one [Gene Scallop](https://spongebob.fandom.com/wiki/Gene%5FScallop).

A 2025 [Eater survey](https://www.eater.com/press-room/24388888/future-generations-restaurant-dining-survey-research) found that [77%](https://www.eater.com/press-room/24388888/future-generations-restaurant-dining-survey-research) of Gen Z discover restaurants through social media, and [72%](https://www.eater.com/press-room/24388888/future-generations-restaurant-dining-survey-research) trust the reviews and recommendations they find there, compared with just [21%](https://www.eater.com/press-room/24388888/future-generations-restaurant-dining-survey-research) of baby boomers. Beli, the app where diners rank restaurants and share reviews with friends, has said [80% of its users are under 35](https://www.foodnetwork.com/fn-dish/news/beli-app-trend). Its users logged [50 million rankings](https://www.yahoo.com/lifestyle/articles/beli-users-crown-mass-cocktail-135223467.html) in 2025, up from 30 million in 2024 and 13 million in 2023\.

Everyone's a food critic now. Not everyone's a reliable one. A three-month wait and three- to four-figure bill, depending on party size and appetite, tend to inspire exaggerated verdicts at both extremes. "It was fine" is the most honest review nobody on Beli wants to give. So when it comes to naming the best restaurant of them all: let the professionals cook.

[The 50 Best Restaurants](https://www.the50.com/restaurants/), formerly The World's 50 Best Restaurants, will be revealed at a ceremony in Lima, Peru, on Wednesday. The annual ranking, launched in 2002 and organized by William Reed, is [determined by more than 1,100 industry experts](https://www.the50.com/restaurants/best-in-the-world/voting/the-voting-system), divided equally among chefs and restaurateurs, food writers and critics, and well-traveled diners. Peru's tourism agency estimates this year's event will generate [$2 million](https://www.latintimes.com/50-best-restaurants-2026-ceremony-lima-maido-600844) in economic activity for Lima. Whichever establishment is named No. 1 can expect a boom, too: [El Celler de Can Roca](https://time.com/81073/noma-best-restaurant-world-redzepi/) received 121,000 reservation requests and visits from more than 1,200 journalists in the year after its 2013 win.

The best restaurant used to come back for seconds: El Bulli in Spain won the top spot five times, [Noma](https://time.com/81073/noma-best-restaurant-world-redzepi/) in Denmark four, and The French Laundry in California and El Celler de Can Roca in Spain twice each. In 2019, organizers made past No. 1 restaurants ineligible for future rankings, moving them onto a [Best of the Best](https://www.the50.com/restaurants/best-in-the-world/best-of-the-best) list.

With past winners off the menu, prediction-market traders are backing a restaurant that has finished second two years running. Recent history makes a compelling case for its promotion. It made a compelling case last year, too.

## World's 50 Best Restaurants Odds

Here are the [2026 World's 50 Best Restaurants odds](https://kalshi.com/markets/kxbestrestaurant/worlds-best-restaurant/kxbestrestaurant-26), per Kalshi.

![](https://gcp-na-images.contentstack.com/v3/assets/bltea6093859af6183b/blt3b03a9c770768aed/6aea32ef0fe27a7f9a82c75f/Screenshot_2026-11-03_at_1.15.46_PM.png?branch=main_v1)

Four of the past five establishments to be named the best restaurant were the preceding edition's runner-up: Noma, Geranium, Central, and Disfrutar each rose from second to first in consecutive rankings from 2021 through 2024\. Maido climbed from fifth to first in 2025, canceling what looked like the runner-up's standing reservation for first place.

[Asador Etxebarri](https://www.the50.com/discovery/Establishments/Spain/Atxondo/Asador-Etxebarri.html) has now been named the world's second-best restaurant for two straight years. Located in Spain's Basque Country and open since 1990, Asador Etxebarri is run by self-taught chef [Bittor Arguinzoniz](https://www.foodswinesfromspain.com/en/business/who-is-who/2023/bittor-arginzoniz), who builds his own grills and has been labeled the "[undisputed king](https://www.the50.com/discovery/Establishments/Spain/Atxondo/Asador-Etxebarri.html)" of them. Arguinzoniz specializes in Spanish barbecue dishes, with his unwavering commitment to fire extending to ice cream made from milk smoked over coals. Asador Etxebarri is the favorite to be named 2026's best restaurant at 64% on Kalshi, and its market-apparent challenger has already been eliminated.

Khufu's in Giza is listed at 49% on Kalshi despite finishing No. 97 in the [51-100 rankings](https://www.the50.com/stories/News/the-50-best-restaurants-2026-51-100-extended-list-revealed.html) published last month. The lingering price could reflect older trades in Khufu's favor or more recent ones by traders who missed the announcement. Asador Etxebarri's biggest hurdle may be a fresh set of palates. Organizers [replace](https://www.the50.com/restaurants/best-in-the-world/voting/the-voting-system) at least a quarter of the voting academy annually, and [voters must have dined](https://www.the50.com/restaurants/best-in-the-world/voting/the-voting-system) at their nominated establishments within the past 18 months. Some of the voters who helped Asador Etxebarri secure its runner-up finishes may no longer have a ballot. Others who have dined there in the past may not have returned recently enough.

In a market that offers few clues beyond past rankings, Asador Etxebarri is a logical favorite to be named this year's best restaurant—and attract a swarm of Gene Scallops ready to dish their takes on the Best of the Best.
