Most visitors to Gay, an hour southwest of Atlanta, come to hunt antiques at the semiannual Cotton Fair, cross Georgia’s oldest covered bridge, or tour filming locations from _The Walking Dead._ Since late 2024, a new kind of zombie has appeared in town. Drifting between private wood-fired saunas, cold plunges, and meditative meet-and-greets with resident horses, they’re the blissed-out guests of [Quercus](https://www.worldofquercus.com/ "undefined"), a luxurious micro-resort set deep in the countryside. After establishing the biodynamic farm at the heart of the project, nutritionist Chiara Visconti di Modrone and her husband, Angelos Pervanas, built four impeccable cabins—each with indoor-outdoor fireplaces and Frette-dressed mattresses made from organic New Zealand wool—across 3,800 acres of pine forest, cattle pasture, pecan groves, and fishing ponds. With so few guests, Quercus feels less like a hotel than an ag-obsessed aristocrat’s country estate—fitting, given Visconti di Modrone’s Milanese noble lineage. Not having to tip or sign checks reinforces the fantasy, and the nightly rate covers activities plus three creative, farm-rooted meals daily from chef-partner Ryan Smith, served by a salaried, benefits-earning staff.
