If Copenhagen earned its reputation as the Nordic hub of gastronomy, this small restaurant in Tórshavn, the capital of the Faeroe Islands between Iceland and Norway, is intent on proving that the region’s most compelling cooking may lie even farther north. Awarded two Michelin stars within three months of opening, chef Poul Andrias Ziska has turned [PAZ](https://paz.fo/) into a contemporary testing ground for the islands’ extraordinary seafood, drawn from icy waters and appearing even in dessert form (think blue mussel candy or ice cream made from limpet and dulse). Ziska also weaves Faeroese tradition into a distinctly New Nordic sensibility: His take on ræstkjøt, the island’s fermented lamb, is deeply mature and pungent, served shredded to pair with a savory swede cream and fermented lingonberries for balance. There’s also strictly seasonal fulmar seabird—long part of the Faeroese diet—served with velvety beetroot and a mussel sauce. On an island this remote, hyper-local sourcing is essential. Lamb comes from a small producer in Gásadalur; crates of live shellfish are tethered to a pontoon 15 minutes from the restaurant, creating a fjord-to-plate system; and Ziska is also acquiring a small plot of land to grow vegetables for the 2026 season.
