The experience begins on the mezzanine—part laboratory, part museum—where roots, herbs, teas, fruits, and spices sit alongside more unexpected ingredients, including honey-bred black ants used as garnishes—an introduction to the thinking behind the drinks to follow. One floor up, the Observation Cell serves as the main bar and dining room, anchored by an omakase-style counter with just 10 seats. Cocktails are organized by time. _Yesterday_ revisits classics with modern technique, from a reworked Long Island Iced Tea to a refined Appletini. _Today_ blends global influences with local flavors (to wit: the tropical Ube Colada), while _Tomorrow_ leans fully experimental with creations like Where’s My Rice, a tequila-based riff on Thai curry, and Charred Aubergine, a ginny nod to _baingan ka bharta_ (roasted eggplant). The journey culminates in the AMP Room, a listening lounge for high-fidelity electronic music and events. This year, a private dining concept called Six will debut here, pairing cocktails with a six-course menu inspired by India’s six seasons.
