In the world of commercial kitchens, there are speed ovens—mostly for super-fast reheating in fast-food or chain restaurants—and there are combi steamer ovens, which use heat, air, and humidity to shorten cooking times. But this year, Italian company Unox rolled out the Speed-X, the first self-cleaning oven to combine both speed and combi functions. It’s programmable and voice-activated, and can cook 10 different dishes at varying temperatures, all at the same time. While its price tag is about 70% higher than other combi ovens, the Speed-X can cook a whole chicken in just seven minutes—faster than any other oven.
