##### Through decades of innovation, Eiwa Confectionery continues its quest to create the perfect marshmallow

Japan’s love for sweets cannot be overstated. From traditional _wagashi_ pairings for tea to modern, colorful creations that operate on rapid trend cycles, the nation’s confectionery market is estimated at more than $26 billion (4 trillion yen) annually. Visiting a _dagashiya_ shop or a supermarket sweets section can yield a dizzying array of flavors, textures and designs to satisfy both the eyes and taste buds. There really is something for everyone. In particular, Japanese marshmallows, with their soft, springy texture and pastel color tones, have found a natural place alongside Japan’s kawaii culture and appetite for sweets. Eiwa Confectionery, headquartered in the city of Azumino, Nagano prefecture, has specialized in marshmallow-making for decades and is now looking to bring joy to fans around the world.

When first entering the United States market, one of the biggest challenges for Eiwa was promoting marshmallows as a standalone snack, given their all-American association with baking, campfires and hot beverages. The company found that marshmallows were generally seen as an ingredient for a wider recipe. “In Japan, however, they are primarily consumed as-is,” said Aijiro Kodaka, president of Eiwa Holdings, who led the marshmallow division for many years. “Marshmallows in Japan also tend to be more elastic, almost similar to mochi. We believe this is one of the reasons they have been readily accepted by Japanese consumers, and over time, this has fostered our own unique marshmallow culture.

“Eiwa has built on this demand by creating marshmallows with a range of unique flavors and fillings, from chocolate and strawberry to the more unconventional. We have developed marshmallows made with the popular Japanese drink CALPIS\*, as well as a variety of other unique flavors and fillings,” Kodaka said. Thanks to sophisticated production techniques honed over nearly seven decades, Eiwa continues to find new ways for people to enjoy marshmallows. “We create unique and playful shapes that allow consumers to enjoy not only the taste of marshmallows, but also experience the broader world they represent,” said Kodaka. “Eiwa prides itself on having the best technical know-how, allowing us to introduce unconventional products. Our manufacturing capabilities are among the best in the business.”

Building on marshmallow production techniques cultivated in Azumino, known for its pristine water and air, Eiwa has expanded into overseas markets including the U.S. and China. By placing his marshmallows closer to consumers, Kodaka hopes the company can continue to bring joy to more people around the world. “Confectionery should be full of dreams. It should bring smiles to people,” he said. “Eiwa will continue to create marshmallows that no one has ever seen before.”
