He reckoned Suckahh was perfect. “We took it to the U.S. and we got slaughtered,” admits the 58-year-old Australian inventor. “They said it was probably the worst name you could ever do.” Baron eventually came up with the more palatable Sipahh. Since launching them in late 2005, he’s sold more than 500 million of the plastic straws, which are filled with flavor beads that dissolve when milk is sucked — or sipped — through them. End to end, he boasts, the straws would go twice around the world. But it’s not far enough. Baron believes he can more than double his sales by putting beads of bacteria inside the straws. Breakfasting on bacteria — call it the billion-bug diet, because that’s how many the company says will be in each straw — might seem like a disgusting idea. But Baron’s Sydney-based company, Unistraw, says there’s a lucrative and growing global market for probiotic bacteria (the name comes from the Greek words “for” and “life”). These so-called “good” bugs live in the human gut; the claimed benefits of boosting their numbers include better digestion and a stronger immune system, the easing of allergies, stronger nails and shinier hair. For about a century, scientists have been studying the role bacteria play in the gastrointestinal tract, a complex ecosystem made up of helpful and harmful bugs whose interactions aren’t fully understood. The bugs begin to infiltrate when we’re born. Some make us sick, while others help the body work better. An average adult gut contains about a kilogram of bacteria — 100 trillion bugs of some 500 different species. Unistraw’s interest is spurred by a different set of numbers. “What’s exciting,” says managing director Tim York, “is that today it’s a $7 billion market, and it’s projected to be worth $20 billion by 2010.” The big players include companies like Japan’s Yakult and France’s Danone (Dannon in the U.S.), which sell probiotic bacteria in yogurt. Dannon’s Activia yogurt was launched in America in 2006 and passed $100 million in sales in its first year. Treating Ourselves York insists that probiotics aren’t a passing fad but part of a trend in which people try to prevent illness through food and exercise rather than waiting until they get sick and taking medicine. The company’s advisers, he says, “see probiotics, particularly for immunity and digestive health, as the largest and most enduring functional food trend — significantly bigger than omega-3 and plant oils to lower cholesterol.” To stake its claim, the Australian company has just done a deal with Denmark’s Danisco to produce straws containing three strains of freeze-dried bacteria that “wake up” when they come into contact with liquid. Unlike yogurt, the straws don’t need to be refrigerated and can be consumed in juice. The price could be as little as half that of a probiotic yogurt. The big targets are Asia and Latin America. York believes China has huge potential thanks to a new version of the straw, which has been downsized to fit onto the side of the small cartons for juice or ultra-heat-treated (UHT) milk produced by global packaging giant Tetra Pak. These packs are designed to preserve milk or juice without refrigeration for a year — which means all bacteria in them must be killed. York’s pitch is that the new Aussie straw can not only add flavor but put the “good” bacteria back. “Tetra Pak is excited because the straw allows the package to do things it can’t do today,” he says. “In the next three to five years, we’d like to be selling a billion-plus straws a year.” Baron, an industrial designer whose other products include ant-free dog bowls and shop shelving systems, says he always saw the straw as a system for delivering more than flavor. He started tinkering with the idea in 1996, after wondering why flavored milk cost so much more than the plain variety. He tried using a fat plastic straw from McDonald’s and a filter made from one of his daughter’s school stockings. That didn’t work. He soon designed a new type of conical filter that wouldn’t clog, and figured out how to create flavor beads by making a tiny core and gradually adding material to it in a tumbler. Sucralose sweetener kept sugar levels — high in most flavored milks — at half a teaspoon, or 2 g, per straw. His first big break came when a U.S. marketer saw his patent and asked if he could make a trial run of 60,000 straws to be served with milk in the restaurant chain Denny’s. Dragging in all the friends he could find, Baron managed just in time to fill the order by hand. He lost money, but market research showed that the straws boosted Denny’s milk sales by more than 50 per cent. “It meant the product had a good chance internationally,” Baron says. Taste of Success The flavored-milk straws hit Australian shelves in late 2005 and are now sold in 69 countries; Russia and China will soon join the list. Baron is also looking at flavor straws for water and fruit juice. Ingredients have been trialed that make soda water taste like Coca-Cola, and an Indian company called recently to ask if it was possible to add spicy masala flavor to the beads for mixing with orange juice. “It tasted great,” Baron says of the sample batch. The same technology that can impart the taste of cola, cookies or curry can also deliver medicines. Unistraw has an agreement with a South African pharmaceutical company to add nutrients to straws for HIV/AIDS sufferers, who can have difficulty swallowing pills. But it’s in the gut that the company sees immediate potential. According to Unistraw consultant microbiologist Patricia Conway, a professor in the School of Biotechnology and Biomolecular Sciences at the University of New South Wales, there’s no doubt about the health benefits of good gut microbes. Harmful microbes will flourish, she says, unless enough beneficial ones are there to keep them under control. “It’s like kids in the schoolyard: once the bullies are allowed to get stronger, the good kids go hide in the corners.” The idea that adding bacteria to the diet could boost health came from the Russian physiologist and 1908 Nobel Prize winner Elie Metchnikoff. He believed that long-lived Bulgarians were benefiting from bugs in their fermented dairy foods. The most common probiotics are strains of Lactobacillus, used as starter cultures in yogurts, or Bifidobacterium, found from infancy in the gut and believed to improve immunity. Conway says that boosting the levels of these bacteria has a variety of benefits: “Seventy per cent of your immune system is localized in your intestine, and intestinal bacteria trigger the immune system.” The wrong balance among species can cause or aggravate flatulence, diarrhea, constipation, infections, cancers, and conditions like irritable bowel syndrome. “There is no question that the large-bowel microflora \[bacteria\] are important for human health and that probiotics can contribute positively,” says David Topping, a chief research scientist at Australia’s premier science body, the CSIRO. “But there is much that we don’t know about the nature of the benefits they give.” Studies of probiotic products have found that some contain far fewer microbes than their makers claim; others contain no live bacteria at all. Earlier this year, Dannon was hit with legal action in California for allegedly exaggerating the benefits of Activia yogurt. The company rejected the accusation. Topping says probiotics have been found to help children, especially by treating diarrhea, which kills more than 2 million infants a year. A recent American study published in the science journal Nature found that good microbes in the gut may protect against diabetes, whose incidence among children is rising. But doubt remains about how useful probiotics are to adults. On that question, “the jury is still out,” Topping says: more large-scale trials are needed.
