It doesn’t matter if you cooked the world’s most delicious turkey and stuffing. Chances are you will still have Thanksgiving leftovers for days on end. It’s inevitable. Plain ol’ stuffing (or dressing, if you call it that), turkey, and gravy can get boring pretty quickly, but this Thanksgiving hash never does—especially when you put an egg on it. By now, your leftover turkey and leftover stuffing have probably been sitting in the fridge for at least 24 hours. Fear not, the combination of a runny yolk and leftover gravy ensures that you won’t be eating overly-dry turkey and stuffing hash. If you’re sick of cooking (because you’ve already spent enough time in the kitchen), feel free to skip the sautéed onions.

Ingredients

  • 1 tablespoon butter
  • ¼ cup chopped yellow onion
  • ½ cup leftover shredded turkey
  • 1 cup leftover stuffing
  • ⅓ cup gravy
  • 2 tablespoons chopped parsley
  • 1 fried egg

Directions

  1. Heat a nonstick skillet with butter over medium heat.
  2. When butter is melted, add onion and sauté for 5 minutes, or until onions are translucent and just beginning to brown.
  3. Add turkey and gravy. Cook for 2 to 3 minutes, add stuffing and continue cooking, stirring frequently. Remove from heat and stir in parsley.
  4. Top with a fried egg and devour.
